Jaleo and the popularization of tapas in Washington, D.C.

Chef José Andrés opened Jaleo in Washington, D.C., in 1993 as a tapas restaurant in the Penn Quarter neighborhood. Jaleo introduced many local diners to Spanish small-plate dining and is widely credited with helping popularize tapas-style restaurants in the U.S. Andrés's Jaleo became a notable early example of international culinary influence on D.C.'s contemporary dining scene.
